The first week of 2021 is over, let us celebrate with some effortless cookies! Am I right? Moving out of the holidays, I’m instantly craving veggie packed dishes. However, if there is anything you can capture from my approach to nutrition, is that it’s all about balance. If you put any particular type of food on a pedal stool, you’re going to instantly be craving it much more than you would if you allowed yourself to enjoy it whenever you wanted. 

 

When did I figure this all out? Honestly, as early as middle school. At that time my mom was working, funds were tight and we rarely had any food and never anything that a young adolescent craved. So when visiting friends homes I always overate due to the mindset that I didn’t know when I would have that “treat” again. The same can be said for your adult life and how you approach “treats”. Enjoy what you want, when you want!

 

When it comes to cookies, I’m obsessed with the minimalistic approach. The last thing I want to do post cooking is scrub tons of pans and mixing bowls just to make a treat. So you’ll see a wide variety of one bowl cakes and cookies! When thinking of the next best cookie recipe, I craved the traditional M+M style cookies. Believe it or not, there is only one company I’ve come across the makes a vegan M+M. You can find the link for them in the recipe below. 

 

 


 

What’s fab about this cookie? Everything! It’s quick, easy, nostalgic, rich with chocolate, has texture, color, you can use melted butter or coconut oil, I make mine with stevia sweetened chocolate so less sugar, you don’t have to beat the butter, it uses only 1 bowl, they are perfect for any season, can easily be made in bulk, buttery soft yet a lil crispy, and just my newest obsession!

Instructions

  1. In a large bowl, whisk together the sugar, brown sugar, salt, and melted coconut oil or butter until combined.
  2. Whisk in room temp non-dairy milk and vanilla, until all sugar has dissolved and the batter is smooth.
  3. Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix.
  4. You can fold in the M&M’s now or wait (my preference in case color fades)
  5. Cover and chill the dough in the fridge for a minimum of 2hrs. The longer the better!
  6. Preheat oven to 350°F (180°C).
  7. Fold in the chocolate chips and M+M’s to the chilled dough. Make 1 ice cream scoop of batter and place on a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes, or until cookies just begin to brown on the edges. Allow to cool for 10-15, then place on cooling rack to fully cool.
