Vegan Pumpkin Spice Dalgona Coffee

There are many things we learned this past year. One of them, is that the Dalgona coffee will change your world! Months before this concept exploded, I was testing this coffee whip on cake and more. Little did I know that it’s actually a huge concept that I knew nothing about, dalgona coffee!
When it comes to creating whipped coffee drinks of any kind, it’s honestly not my thing. However, this concept is so seamless and so worth it, you’ll be sold after the first sip!
Dalgona coffee is said to be a beverage made by whipping equal proportions of instant coffee powder, sugar, and hot water until it becomes creamy and then adding it to cold or hot milk. Occasionally, it is topped with coffee powder, cocoa, crumbled biscuits, or honey.
The great part about this coffee is that you can tailor it to your own tastebuds! You can make a fab dalgona coffee sans milk and you can even sub the white sugar for coconut (you may get a darker color), but you can’t go wrong!
What’s great about this recipe is that like all dalgona coffee, it’s quick, easy, affordable, packs tons of flavor, the oat milk adds a richness, packs real pumpkin, dairy free, perfect all year round, perfect for brunch, and just such a crowd pleaser!

Vegan Pumpkin Spice Dalgona Coffee

Ingredients
Base:
1 2/3 cups oat milk
1/4 cup pumpkin puree
2 teaspoons white sugar
1 teaspoon pumpkin spice
1/2 teaspoon vanilla extract
1/4 cup boiling water
1/4 cup instant coffee granules
1/4 cup white sugar
1/4 teaspoon pumpkin spice
Instructions
- Stir oat milk, pumpkin, sugar, and pumpkin pie spice together in a saucepan over medium-high heat. Cook, stirring, until sugar dissolves and mixture just comes to a simmer. Remove from heat, add the vanilla extract, cover to keep warm.
- Stir boiling water, instant coffee, sugar, and pumpkin pie spice for whipped coffee together in a bowl. Beat with an electric mixer on high until fluffy and stiff peaks form, about 2 minutes.
- Divide warm oat milk base between 2 large mugs. Top with whipped coffee.
