One of the concepts that’s been all over social media, is these chocolate rice cakes! I lived through the rice cake era and while it’s hard to find an organic brand today, you’ll never see a chocolate option. There was one that came out years ago that was a healthier option, but you literally have to order them. So when the buzz was going around about this concept, I knew I had to try, and I’m just so glad I did!
What’s great about the brown rice cakes is that they actually pack fiber and nutrients. Combine those with a a nut butter and some chocolate and boom, you have a great dessert or snack. Since I’m all about tahini and there wasn’t this variation yet, I knew we had to do a vegan Salted Tahini Chocolate Rice Cake! If you’re not familiar with tahini, it’s an ingredient that just further enhances the flavor profile of chocolate, in the same way that coffee does. Whenever you put them together, you just have a winning combination. If you have tried it, now is your chance!

Viral TikoTok Salted Tahini Chocolate Rice Cake
- Total Time: 10 mins
- Yield: 2 Rice Cakes 1x
Ingredients
- 2 Brown Rice Cakes
- 2/3 stevia sweetened chocolate chips
- 1 tsp coconut oil
- 1 tsp flake salt
- 1/2 cup tahini
Instructions
- Spread tahini on the rice cakes bringing it close to the edge, but not all the way. Pop in the freeze for 5 – 10 mins until slightly firm. (doesn’t move everywhere)
- Melt chocolate and coconut oil in the microwave for 1 min stirring every 15 seconds until fully melted. Allow to slightly cool, then spread over the tahini covering the entire surface. Sprinkle with flake salt.
- Freeze for 5 minutes until firm and enjoy! May be left in the freeze to be enjoyed later!
