The biggest issue can just be sourcing a dairy free option. However, you can find an accessible option on Amazon. The only trick with working with white chocolate is that you have to be even more careful when melting it as it can easily sieze, and you have to use coconut oil when trying to melt it. Otherwise, it won’t melt right.

Vegan Cookies + Cream Bark
- Total Time: 10 minutes
- Yield: Serves 6-8 1x
Ingredients
- 40 chocolate sandwich cookies
- 2 bags vegan white chocolate chip, melted
- 1 tbsp coconut oil
Instructions
- Roughly chop the chocolate cookies
- in a pot over low/med heat add the white chips and coconut oil. Continue stirring until fully melted. If the mixture remains too firm, add additional coconut oil 1/2 tsp at a time.
- Add of the chopped cookies to the melted white chocolate and mix it together.
- Layer the mixture onto a parchment paper-lined baking sheet, spreading in an even layer with a spatula.
- Sprinkle with additional chopped cookies over the top.
- Allow the chocolate to set on the counter or pop in the fridge covered. Slice into pieces with a sharp knife.
