Vegan Grilled Sweet Corn and Peach Salad with Basil Dressing

If there is one veggie I love for summer, it’s corn! It’s great by itself, thrown in a salad or taco and the list goes on. The best way to enjoy fresh summer corn though? Grilled! I have to believe that just about every veggie tastes better grilled, but especially corn. Something else that pairs really well corn? Anything that has a hint of sweet! Tomatoes or peaches, even red onion, all work together to further enhance the flavor.

When thinking of the next best corn concept, I kept being drawn towards peaches. While more sweet than savory, grilling the peaches enables it to better combine with summer corn.. and just like that, the Grilled Sweet Corn + Peach Salad was born! Believe it or not, basil and sweet corn really go together. Sounds odd, but I promise you, together it’s pure magic!
What’s great about this salad? Everything! It’s quick, easy, affordable, slightly sweet, slightly savory, perfect for summer, filling, great by itself or on tacos, the dressing just puts it over the top, can easily be made in bulk, vibrant, you could even add an element of heat!

Vegan Grilled Sweet Corn and Peach Salad with basil dressing
- Total Time: 25 minutes

Ingredients
Salad:
- 2 tbsp oil
- 5 ears corn
- 1/3 cup red onion, sliced thin
- 1 peach, sliced
Basil dressing:
- 2 tbsp olive oil
- 1/2 cup vegan mayo
- 1 cup fresh basil 15-20 leaves, finely chopped
- 1 clove garlic, minced
- 2 scallions, chopped
- 1/2 tsp salt
Instructions
- Prepare a grill for medium heat. Brush the corn and sliced peaches with oil, season with salt.
- Grill corn, turning occasionally, until corn is charred, 10–12 minutes for corn. Peaches should take 7 minutes (3.5 mins on each side). Transfer to a platter and let cool slightly before shucking corn.
- Cut the kernels from the cobb in a bowl. Roughly chop the grilled peaches leaving 2 to place on top.
- Dressing: Add all the ingredients to a small dish, combine. Toss and coat the corn/peach mixture and red onion, in the dressing. Garnish with additional salt, grilled peaches and basil.
