Let’s talk summer salads!

 

Within the past 5-7 years, the watermelon mint salad concept has taken over. For some it may still sound like this obscure concept, I get you! However, for whatever reason the salad components just pair so well together and it makes for the perfect warm weather salad. I can’t even say what it is about this salad that draws me in, as it’s everything. It’s sweet, crisp, refreshing, gorgeous, filling, tangy, and the list goes on! If you’re unsure about this dish, here’s your sign, you have to try it!

 

 


 

What I love most about this salad, is that it’s quick, easy, affordable, light, refreshing has minimal ingredients, can be made with vegan cheese or no cheese, it’s savory with the onion, sweet with the watermelon, has texture, is packed with mint, you can even add an element of heat if desired, throw in avocado or nuts for healthy fats, it can easily be made in bulk, perf for spring and summer and is just such a crowd pleaser!

Watermelon Feta Salad

Ingredients

Units Scale

Salad: 

  • 1/2 cup feta or vegan feta
  • 4 cups seedless watermelon, cut into cubes
  • 1 cup seedless cucumber, chopped
  • 1/2 cup ed onion, sliced think
  • 810 coarsely chopped mint leaves
  • Salt/Pepper as needed

Dressing: 

 


Instructions

 

  1. In a large bowl, combine the cucumber, watermelon and onion.
  2. In a small bowl combine the dressing ingredients. Pour over the salad.
  3. Top with feta cheese and additional mint. Serve chilled.
