Vegan Super Food Cinnamon Apple Granola with Toasted Pecans

If there is one concept I love making from scratch, it’s granola. I typically always reach for my basic avocado toast, but some days I’m craving something a lil sweet and homemade granola is just so easy!
Let’s be honest, right now, the market is saturated with ready made granola. Let’s also be honest, that’s because everyone loves a good granola, it’s cheap to make, making the profit margins very high. These products are also very high in sugar and feature additives to make them shelf stable. That being said, you can skip all of that and control the sugar content and just make it yourself!
I don’t do a lot of oatmeal today, but I love oats and find them not only nutrient dense, but nostalgic. Morning oatmeal was my fathers go to, so I love to work it in where I can as it’s fiber packed, filling, affordable, and can even make a good flour alternative for various concepts.
What’s great about this homemade granola? It features homemade dehydrated apples, it’s the saving grace concept for apples on their way out, has minimal ingredients, minimal added sugar, features crispy pecans, superfoods like quinoa and chia seeds for an added protein boost, pecans add healthy fats, it’s gluten free, can easily be made in bulk, given as a holiday gift, perfect for fall + winter, and is my new favorite granola!!

Cinnamon Apple Pie Granola
- Total Time: 2 hours 40 minutes
- Yield: 4 cups 1x
Ingredients
Apples:
- 3 granny smith apples, peeled, chopped
- 1 tsp ground cinnamon
- 1 tbsp coconut sugar
- 1 tbsp melted coconut oil
Granola:
- 3 cup gluten free oats
- 3/4 cup chopped pecans
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1/4 cup pure maple syrup
- 2 1/2 tablespoons coconut oil
- 3/4 cup dry quinoa
- 2 tbsp chia seeds
Instructions
- Dehydrated apple: Preheat the oven to 225 degrees. Thinly slice apples by hand or on a mandolin. Combine the apples with the coconut oil, cinnamon, and coconut sugar and throw on pan lined with parchment paper. Bake at 225 degrees for one hour, then flip the slices and bake an additional hour to 1 1/2 hours.
- To make granola: Preheat oven 300 degrees
- Combine the oats, pecans, cinnamon, ground nutmeg, salt, maple syrup, quinoa, chia seeds, and melted coconut oil. Mix well to coat evenly
- Pour mixture on a parchment-lined baking sheet, spreading evenly
- Bake for 30 minutes, flipping the granola at the 15 minute mark
- Once granola is cooled, add the apple chips
- Prep Time: 10 minutes
- Cook Time: 2 hours 30 minutes
