Vegan Gluten Free Chocolate Chip Blondies

 

 

 

I’ve been on the hunt to create effortless staples that you can incorporate into your routine. When it comes to baking, many of us get overwhelmed with the steps and endless ingredients, but you can really whip up something fab in minutes without just a handful of items. 

 

In terms of vegan blondies, I’ve found that many times they don’t aesthetically look like the traditional variety the texture is off making them more cake like or too dry and the list goes on. That being said, I was interested in exploring this concept to create a better replication of this staple recipe!

Low and behold, you really can create a vegan version that mirrors the original!

 

 


 

What’s fab about this recipe, is everything! It’s quick, easy, affordable, buttery soft, can be made in minutes, features no added oil, no white flour, no white sugar, can easily be made in bulk, perf for any season, and hands down, my newest obsession!

Instructions

  1. Preheat oven to 350F and line an 8″ or 9″ square pan or loaf pan (brownies will be fewer but larger) with parchment paper.
  2. You can lightly grease the pan for the paper to better adhere.
  3. In a mixing bowl, combine the peanut butter, agave, vegan egg, salt, and baking soda, stir well.
  4. Add in the almond flour. A thick sticky batter will form. Fold in the dark chocolate chips.
  5. Pour the batter into the prepared pan, then smooth the top. Top with additional chips if desired.
  6. Bake at 350ºF until the top is a light golden brown, about 20 minutes.
  7. Allow the blondies cool completely, then cut into squares and serve.

  • Cook Time: 20 minutes
