White Chocolate Pumpkin Bark with candied pecans

Hello & Happy Friday!!

If there is one concept I’m completely enamored with, it’s pumpkin, with anything, but especially..

White Chocolate!

Since as a whole I’m not a big chocolate person, I have to admit, I’ve never made “chocolate bark” before lol. I’ve seen countless recipes of course, but nothing ever called to me like this concept!

What I love about this bark is, everything! It’s so easy, involves  handful of ingredients, has multiple textures, aesthetic appeal, looks fancy but is far from complex, has candied pecans sweetened with coconut sugar and no butter, perf for fall, gifts, and any season in my book lol!

If you’re searching for that perf fall concept to indulge in or simply need a quick and easy gift for friends and love ones, this vegan White Chocolate Pumpkin Bark with candied pecans is it!

Why this recipe rocks:

Minimal ingredients

Looks fancy

Multiple textures

Tastes like pumpkin!

Perf for fall

Perf for gifts

Candied Pecans:

  1. In a large pan add all of the ingredients minus the pecans. Cook for 2-3 minutes until boiling. Toss in the pecans and cook for an additional 3. Remove from heat and throw onto a sheet to cool for 20 minutes.
  2. Take a large bowl and place 1 1/2 cups of chips in one and in the other the remaining 1/2 cup. Divide the spices into each and the coconut oil. Place in the microwave for 30 seconds with removing every 10 seconds and stirring to combine. Once both portions are fully melted add the food coloring to the smaller bowl. In a baking pan layer with wax paper or if you want to copy me you can cut a ziplock bag and use that. (I find it’s easier to remove!).
  3. Layer in the white chocolate. Then in rows layer the orange chocolate with a spoon. After you’ve made rows take a toothpick, skewer or knife and run it through them to create a design. Top with candied pecans and store in the fridge to cool for 15 minutes.
  4. Remove from pan, slices into triangle type pieces, and enjoy!
