If there is one cookie that will forever remain nostalgic to me, it’s the oatmeal chocolate chip! With all the cookie flavor options today, many gravitate away from this classic. However, each bite is like taking a walk down memory lane.

 

One instance that sticks out in my mind is making them in home economics class. Looking back, that was probably the first cookie I ever made. All the feels!

 

Fast forward to today, and we’ve been going down the list with featuring all the cookie staples on EDS. In just the past few months we’ve produced upwards of 10 different 1 bowl cookie recipes and these 1 Bowl Vegan Chocolate Chip Oatmeal Cookies, are actually one of my favorites!

 

 


 

What’s great about this recipe? Everything! It’s my staple 1 bowl cookie base, easy, minimal ingredients, features stevia sweetened chocolate, it’s packed with oats, they are filling, buttery soft yet chewy, perfect for any season, don’t require a long chill time, can easily be made in bulk, and just such a classic cookie!

Vegan Chocolate Chip Oatmeal Cookies

Instructions

  1. In a large bowl, whisk together the sugar, brown sugar, salt, and melted coconut oil or butter until combined.
  2. Whisk in room temp non-dairy milk and vanilla, until all sugar has dissolved and the batter is smooth.
  3. Sift in the flour and baking soda, then fold the the chocolate chips and oats into the mixture with a spatula, being careful not to overmix.
  4. Preheat oven to 350°F (180°C).
  5. Make 1 ice cream scoop of batter and place on a baking sheet lined with parchment paper. Lightly flatten with the palm of your hand.
  6. Bake for 9-12 minutes, or until cookies just begin to brown on the edges. Allow to cool for 10-15, then place on cooling rack to fully cool.
