Kale Guacamole

Lately I’ve been craving a lot of older concepts that I created as well as things I enjoyed in my childhood. Perhaps it’s the pregnancy hormones or me wanting to take a trip down memory lane, but whatever the case.. I’ve been soaking it up one bite at a time!! The first trimester was a food journey, which I plan to share on EDS soon!!
This concept was one I whipped up while in the midst of upwards of taking 20 credits at NYU and living in a tiny NYC apartment. While a quick and easy staple, I love the idea of maximizing the nutrient content of anything that’s green. Surprisingly at the time, there was no Kale Guacamole on Pinterest and my mind was blown lol, and this recipe was created!!
If you’re looking to maximize your meals I highly recommend taking this approach. You can easily throw in greens with countless recipes without compromising the flavor.
What’s fab about this guac, is everything! It’s my staple guacamole recipe, features a handful of ingredients, packs flavor, texture, perf for any season, can easily be made in bulk, perf for entertaining, gives you a boost of nutrients with the kale, and will turn all the kale haters into lovers without them even knowing it!

Kale Guacamole
- Total Time: 15 minutes
Ingredients
- 4 large kale leaves – I recommend curly “Dinosaur” kale, stems removed
- 4 ripe avocados
- 1/2 cup diced red onion
- 1/4 cup diced cilantro, more for garnish
- Zest of 1 lime
- 2 limes, juice only
- 1 teaspoon sea salt
- 1 jalapeño, diced
Instructions
- Thinly slice the kale. Take a little olive oil in your hands and massage the kale. If you’re not a fan of kale I recommend this!
- Place all ingredients in a large bowl. Mash and fold until well combined. Add additional salt, jalapeño or lime juice as desired.
- More of a nutrient boost?! Throw in some chia or hemp seeds!!
Notes
If you want to really mask the kale, you can throw in a food processor for very fine cuts
If you’re craving more flavor you can throw in 1/2 tsp of cumin
