Thanksgiving is this week so we’re featuring some of the staples, like mashed potatoes! While I love a good basic mash, there are countless ways to play around with the flavor and really create something memorable.. like these vegan Caramelized Onion Mash!! Whether you’re all about onions or just love fab food, this dish is a win!!
This week we did an Instagram poll on what Thanksgiving dishes were our least favorites. Believe it or not, there were some people that always pass on the potatoes. (I was shocked too lol) Needless to say, potatoes are typically a go for everyone on the holidays, so I love to get creative with them. Being a fan of all things onions and loving French Onion Soup, I knew there was a way to incorporate them in a fun modern way..
and the vegan Caramelized Onion Mash was born!
What’s great about this dish, is everything! It’s your staple mash base, infused with caramelized onions, garlic, butter, with notes of time. It’s quick, easy, affordable, can easily be made in bulk, has aesthetic appeal, brings so much more flavor than your standard mash, pairs well with any main dish, and is just such a fun recipe!

Vegan Caramelized Onion Mashed Potatoes
- Total Time: 35 minutes
- Yield: 4-5 cups 1x
Ingredients
- 1lb yellow potatoes, peeled, chopped
- 2 large yellow onions, finely chopped
- 1/2 cup + 2 tbsp vegan butter, divided
- 2 tsp sugar
- 4 cloves garlic, minced
- 1/2 cup almond milk
- 2/3 cup vegan sour cream
- 3 tsp fresh thyme
- Salt/Pepper as needed
Instructions
- Bring a large pot of water to a boil. Add the peeled and halved potatoes along with 1 tsp salt. Boil util fork tender. (25 mins)
- Over medium-low heat, melt the vegan butter in a thick-bottomed stainless steel or cast iron pan. Add the finely chopped onions and cook for 10 minutes to soften. Add a pinch of salt and the sugar, then reduce the heat to low, add the garlic and continue to cook the onions for 30-45 mins until they are deep amber in color and caramelized. Stir them often enough so that they don’t burn, but not so much that they won’t brown.
- Drain the potatoes, add the vegan sour cream, almond milk, 1/2 cup vegan butter. Mash with a potatoes masher until you achieve the desired consistency. Fold in 3/4 of the caramelized onions saving the remaining to go on top. Garnish with thyme and serve warm. Season with additional salt and pepper.
