Vegan Folded Quesadilla with Homemade Nacho Cheese

If there is one thing I’ve come to embrace, it’s food trends. A lot of times they come and go, but there are a few that stick around and really hold up. One of those, is folded quesadillas! I don’t know about you, but I’m all about white tortillas and anything quesadilla inspired. Believe it or not, I even own a quesadilla maker lol, I’ve just never used it. (I think I’ve had it for a few years)
While I’ve yet to use the quesadilla maker, there was something about this folded concept that I just had to try. Visually it was stimulating, I liked how the ingredients were placed, and being folded it was honestly easier to eat. If you put vegan nacho cheese on a quesadilla using 2 tortillas, it just wouldn’t hold together. I love this method as it’s just compacted and you tap into all the flavors with each bite.

It’s quick, easy, affordable, you can make it as veggie packed as you like, I pack mine with multiple textures and flavor profiles, it’s perfect for any season, great for entertaining, once cooked the tortilla stays firm and doesn’t get soggy, great even for on the go, you can switch up the veggies and even pair it with a dipping sauce if desired!

Vegan Folded Quesadilla with Homemade Nacho Cheese
- Total Time: 15 mins
- Yield: Makes 2
Ingredients
- 1 cup black beans, rinsed, drained
- 2/3 cup vegan nacho cheese
- 1/3 cup pickled red onions
- 1/3 cup pickled jalapeños
- 1 avocado
- Cilantro, garnish
Instructions
- Lay tortilla flat. Fold in half to create a seam in the tortilla marking the middle. Unfold, and make a small cut to the center of the tortilla.
- Imagine the tortilla is split into 4 equal sections. Add a couple spoonfuls of each ingredient into each section. I love to do avocado, black beans, homemade nacho cheese, and pickled veggies.
- Starting with the bottom left quadrant, fold the tortilla up and over the top left, then the top right, then the bottom right.
- Add 1 tbsp olive oil to the pan. Add quesadillas and cook for 3 minutes per side.
- Remove from heat and garnish with fresh cilantro. Serve immediately and enjoy!

So I usually don’t like quesadillas but this one is killer!! I only want my quesadillas like this now. They’re crunchy on the outside and you get a bite of every ingredient due to the folding. Absolutely delicious!
