Stressed about making your own sauce? You can easily throw it in a blender with a handful of other kitchen staples and boom, you have a homemade sauce! Feel like pasta doesn’t fill you up when it doesn’t feature an animal protein? Think again! With just a 1 cup of cashews you can add body to your pasta sauce, nutrients, and plant protein making it much more filling than just noodles and everyday sauce!

5 Minute Creamy Vegan Blender Red Sauce
- Total Time: 5 minutes
- Yield: 4 servings 1x
Ingredients
- 4 cups sweet cherry tomatoes, plum tomatoes, or canned tomatoes
- 4 large garlic cloves peeled
- 1/2 cup tomato paste
- 1/2 tsp oregano
- 1/2 tsp red pepper flakes
- 1/2 tsp dried basil
- 1/2 small sweet yellow onion
- 1 – 2 tablespoons balsamic vinegar or red wine
- 1 tsp salt
- 1/4 tsp pepper
- 1 tsp white sugar (optional)
- 1/4 cup olive oil
- 1 cup soaked cashews
- Vegetable broth (optional)
Instructions
- Place cashews in boiling water for 10-20 minutes, drain, set aside
- In a high power blender throw all the ingredients in, and blend til smooth. If you need to get things moving drizzle in a little more olive oil, vegetable broth or water a little at a time. Adjust the seasonings as desired. *If you’re in a bind and have even less time, but want a filling sauce, throw ready made red sauce and cashews in the blender! (I love Rao’s Arrabiata)
- Garnish with chopped parsley or basil, red pepper flakes and vegan parm
