After living in the NYC for nearly 9 years, if there is one thing I can’t live without, it’s a good bagel! However, store bought options and even the bagel shops outside of the city just fail to deliver time and time again. I’m not sure if it’s based on the quality of the water being not as good or what, but I typically avoid bagels unless back home as it’s always disappointing. 

 

Fast forward to pregnancy and I was craving bagels left and right to mitigate nausea. I reached for a few organic sprouted options, but it was wonderful to have a quick and easy option that was just full proof like these 4 Ingredient Vegan Everything Bagels!!

 

If you’ve ever tried to make a homemade bagel, it’s tedious, involved, and you’re better off just making a trip to the store. That being said, I wondered how we could create a more effortless bagel that packs the same great flavor and texture but with half the steps.. and this fab recipe was born!!

 

 

 

 

 

 


 

What’s great about these bagels, is everything! They contain only 4 ingredients, are quick, easy, you can top with whatever you like, mirror the texture of traditional bagels, take only 25 minutes, are perf for any season, and contain no dairy or eggs!!

Dough:

  • 1 cup Follow Your Heart vegan sour cream (if you want more protein, you can choose Kite Hill vegan Greek Yogurt)
  • 1 cup self-rising flour or mix 1 cup all purpose flour + 1 1/2 tsp baking powder + 1/2 tsp table salt

Instructions

  1. Preheat oven to 375°F.  Line a large baking sheet with parchment paper or silicone baking mat.
  2. In a large bowl, add vegan sour cream and flour. With your hands or a spatula, mix together flour and sour creamuntil it begins to form a crumbly dough. Use your hands to push the dough together into one ball. The dough will be very sticky.
  3. Knead the dough on a floured surface or in the bowl about 15 times, adding an additional 1/3 cup flour gradually if it becomes too sticky.
  4. Divide dough into four equal balls. Roll out a ball on a lightly floured surface until it becomes a rope about 3/4 inch thick. Try to make the rope as even and smooth as possible. Pinch ends shut to form a round circle. Repeat with remaining dough.Place bagels onto a baking sheet.
  5. Brush tops with melted vegan butter. Sprinkle tops with everything bagel seasoning
  6. Bake bagels for about 23-25 minutes or until bagels are cooked all the way through. Remove bagels from the oven. If you’d like to brown them more simply set the oven on 500 and bake for 2-3 minutes. Allow bagels cool a few minutes. Slice, toast, and serve with vegan scallion cream cheese!

    How do you suggest storing these? The refrigerator or counter?

    1. I would actually store on the counter in a sealed container as any type of bread that’s refrigerated tends to harden faster.
