If there is one dish I never enjoy enough, it’s rice! I’m one of those people who has to have flavor. So when it comes to rice, while I love it plain, I have to put a fresh spin on it. When thinking of the perfect spring dish, Lemon Dill Rice came to mind! 

I had tried simple dill rice before, but I love adding lemon to anything. Adding acid simply provides another dimension of flavor that works with just about anything!

Also, I always find that I have lingering fresh dill. The portions when you buy it are generally large, so your guaranteed to have some floating around. If you’re searching for more ways to enjoy it, this is it!

EASY LEMON DILL RICE

Ingredients

Units Scale
  • 1 large bunch dill, trimmed and finely chopped
  • 3 tablespoons dried dill
  • 3 cups cooked white basmati or jasmine rice
  • 2 tablespoons of olive oil
  • Juice from 1 lemon
  • 2 teaspoons kosher salt
  • Garnish: lemon zest

Instructions

  1. Chop the fresh dill and set aside 1/4 cup to go on top.
  2. In a bowl combine the rice, chopped dill, dried dill, lemon juice, olive oil and salt. Garnish with lemon zest.
