If there is one dish I never enjoy enough, it’s rice! I’m one of those people who has to have flavor. So when it comes to rice, while I love it plain, I have to put a fresh spin on it. When thinking of the perfect spring dish, Lemon Dill Rice came to mind!Â
I had tried simple dill rice before, but I love adding lemon to anything. Adding acid simply provides another dimension of flavor that works with just about anything!

EASY LEMON DILL RICE
- Total Time: 5 mins
- Yield: Serves 2
Ingredients
- 1 large bunch dill, trimmed and finely chopped
- 3 tablespoons dried dill
- 3 cups cooked white basmati or jasmine rice
- 2 tablespoons of olive oil
- Juice from 1 lemon
- 2 teaspoons kosher salt
- Garnish: lemon zest
Instructions
- Chop the fresh dill and set aside 1/4 cup to go on top.
- In a bowl combine the rice, chopped dill, dried dill, lemon juice, olive oil and salt. Garnish with lemon zest.
