Vegan Zucchini Quiche

I’ve been on a mission to bring you countless breakfast concepts form savory to sweet! While we all love a good pancake or muffin, it can be more of a challenge to create savory dishes. One of my favorite concepts that typically is overlooked, is a good vegan quiche!
I feel as though quiches were big in the mid to late 90’s and somewhat fizzled out. However, I love a good homemade crust, I love the texture, but most of all, I love that you can pack a quiche with whatever veggies you like!

What’s fab about this quiche, is everything! It’s quick, easy, has minimal ingredients, affordable, perf for any season, cheesy, perf for brunch, filling, perf for meal prep Sundays, and veggie packed!

Can you just do this without the crust, do you think it will come out fine?
Instructions state to add spinach and artichoke, but ingredients list is not and say the quantity. Help!?
Hi Sassy! Thank you so much for catching that. There was a glitch in the recipe and it was referencing another a similar recipe. there is no artichokes or spinach in this dish and it focuses just on zucchini. However, you can absolutely fold in some fresh spinach as well as artichokes with the zucchini if you like. The recipe has been updated. Let me know if you have any questions!

Mine came out super salty and mushy. Did I do something wrong?
Hi Aurora, Did you use extra firm tofu? This is an older recipe, but using firm tofu you should get a texture, and not be just mush.
