The cook fairly fast, resemble fries, have texture, but also get crispy, they pair well with savory dips and offer a hint of sweet, and the list just goes on an on! Bonus, carrot fries pack more nutrients and fiber than a potato keeping you fuller and due to many properties, your skin glowing.

Ingredients

Scale

Carrots:

  • 1620 carrots, wash, peeled
  • 1 Tbsp ground curry
  • 2 Tsps flake salt
  • 2 Tbsp oil

Aioli:

Instructions

  1. Wash, peel and chop carrots into fry shapes. The thinner the better in terms of the right texture and crispy-ness.
  2. Place on a pan and drizzle with olive oil, salt, and curry powder. Toss and coat. I recommend using tongs to not stain your hands or nails.
  3. Place into an air fryer and bake for 25 mins., checking about halfway through and tossing as needed.
  4. Aioli: Place everything in a small dish and combine.
  5. Garnish with chopped cilantro and additional flake salt if needed.
