Lately I’ve been all about adding drink recipes to EDS. It’s easy to reach for water, tea, or a kombucha, but I love a homemade beverage like lemonade. The bonus about making a good one is that you can pack on the nutrients and flavor and even skip the traditional white sugar! Think you need a fancy juicer? you honestly don’t! I simply use a mesh “nutmilk” bag that you can find easily on Amazon and just filter it through. While my days of making homemade almond milk are gone, I love a good lemonade and will absolutely whip one out to make it!

 

To date we’ve done a Lemon Rosemary and Lavender Sage Lemonade. However, I wanted to color and even more simpler recipe that doesn’t call for heating and combining flavors. And just like that, the Cucumber Mint Lemonade was born!

 

 


 

I love the idea of cucumber because while you’re losing the fiber in the beverage, you’re still gaining a ton of the nutrients and it’s just so easy! Bonus, I also swear that my skin glows after eating cucumber. What’s great about this recipe, is everything! It’s quick, easy, sugar free, affordable, has aesthetic appeal, packs tons of cucumber, has notes of mint, you can easily double the recipe to make a larger portion, it’s great for summer, but also great all year round, and you can make it an adult beverage if desired!

Cucumber Mint Lemonade

Ingredients

Scale
  • 2 cups cold water
  • 1 cucumber, roughly chopped
  • 3050 drops liquid stevia
  • 1 1/4 cups fresh lemon juice
  • 10 mint leaves
  • 4 cups cold water
  • Additional cucumber and lemon slices, optional

Instructions

  1. In a blender throw everything in. Blend until smooth.
  2. Now with a strainer or my preferred nut milk mesh bag, filter the lemonade through the bag, discard the solids. Add ice and serve chilled! If not enjoying keep in the fridge.
