When it comes to nut butters, there are countless varieties today. You can stick to the standard peanut butter, or venture out into almond butter or my new favorite cashew! The one thing you’ll notice when working with alternatives to peanut butter, is the consistency is different. The product is much thicker with a greater amount of oil to compensate for it. That being said it can be somewhat tricky to work with when baking.

 

When dreaming of a fab nut butter concept, my mind went to a minimalist cookie, but those are a dime a dozen and typically only work when you introduce egg into the mix. So I was on to the next best thing, pie! While I’m not big on peanut butter (truth), I love a good peanut butter pie. I also knew that you could easily recreate this staple concept sans animal products and with NOW’s Nutty Infusions® cashew butter cashew butter. Come to find out, you absolutely can, and it’s so easy!

Ingredients

  • 1 ready made pie crust

Instructions

  1. Pre bake your pie shell according to directions, set aside.
  2. Place all the filling ingredients in a blender, blend until smooth.
  3. Pour the filling into the cooled pie crust and place in the fridge overnight
  4. Combine the chocolate chips and coconut oil in a bowling heat for 1 minute, while combining every 15 seconds to prevent burning. Drizzle on top of the chilled pie and serve. If you find that the texture isn’t firm enough upon serving, simply pop in the freezer for an additional 10-15 minutes to additionally firm it up.
