We typically focus on all things brunch on the weekend, but I wanted to share one of the new concepts from this week! Why? Because it came out so good! Back around 2007 I dined at the widely loved Mr. Chows in NYC for the first time. The one dish they were known for at the time. was the “chicken satay”. While at my core I was plant based I was curious about the flavors and had to try. Although much time has passed, the flavors they captured really created an experience to remember. So much so that today, I had to finally give in and replicate it with tofu!

 

The traditional dish packs heavy cream, chicken stock, chicken itself, and so on and so forth. However, you can easily recreate this dish without compromising flavor by just packing on more. Don’t like tofu? I promise with everything that’s going on in this dish, you’ll quickly forget that it’s even tofu!

 

 

 

 

 


 

What’s great about this dish? Everything! It’s quick, easy, affordable, packs tons of flavor, packs plant protein, the dipping sauce is sweet with a lil heat, has notes of coconut milk/lime/peanuts, you can use the sauce or marinade for other dishes, it can easily be made in bulk, perfect for any season, perfect for entertaining, can be paired with rice to create more of a lunch or dinner, and just such a staple recipe!

Vegan Tofu Satay with Peanut Dipping Sauce

Ingredients

Marinade:

  • 2/3 cup of 1 can full fat coconut milk
  • 2 tsp lemon grass puree
  • 2 tsp thai red curry paste
  • 2 cloves garlic, minced
  • 1/2 tsp turmeric
  • 1 tbsp soy sauce
  • 1/2 squeeze lime

 

Sauce:

 

Other: 

  • 1 block Extra Firm Tofu
  • 1 Tbsp neutral oil

Instructions

 

Drain the water from the tofu with paper towels. If you don’t drain the water enough they won’t soak up the marinade as well. Slice into long pieces. Place a stick in the middle inside each. Place the tofu skewers into a baking dish. You want to get into the center as much as you can, otherwise they will tear.

Marinade: Combine all of the marinade ingredients in a shallow dish or blender. Pour over the skewers, cover, and chill overnight for best results.

Heat a griddle or grill on high heat, add a drizzle of neutral oil and place tofu skewers on the griddle for 3 minutes undisturbed. Then flip and cook the other side. You can continue to cook all sides or set aside.

Dipping sauce: Place all the ingredients in a high power blender and blend until smooth. Adjust seasonings as desired.

Serve tofu skewers with peanut sauce, garnish with chopped cilantro and peanuts.
