Crispy Garlic Parmesan Cauliflower Steaks with Creamy Red Pepper Sauce
If there is one veggie that does it all, it’s cauliflower!
You can roast it, turn into a sauce, rice, a pizza crust and more. One of my favorite ways to enjoy it, is grilling! Grilling instantly softens it versus the time consuming roasting and you can derive much more flavor with grilling. I find that while many have the prep method down, creating an effortless sauce can be a struggle.
Roasted and grilled veggies are great solo. However, if you can create a fab universal sauce that will complement all veggies and truly elevate the flavor, you have a win win.
When thinking of my favorite go to sauce, my roasted red pepper sauce came to mine. This sauce is quick, easy, packs protein from the cashews, a cheese like flavor, the protein makes the sauce more filling. Combine that protein with the fiber packed cauliflower, and you have a dish that delivers! What’s great about this sauce? Everything. Crispy Garlic Parmesan Cauliflower Steaks with Creamy Red Pepper Sauce

Ingredients
Steaks:
- 1 head cauliflower
- Avocado oil spray
- 1/2 tsp salt
- Fresh cracked black pepper
Topping:
- 1/2 cup parmesan, vegan or traditional
- 2 tbsps melted vegan butter
- 1/2 tsp salt
- 1 tsp garlic powder
- 1/2 cup breadcrumbs
Roasted Red Pepper Sauce:
- 1 cup Roasted red peppers
- 2/3 cup cashews, soaked
- Almond milk as needed
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- Fresh cracked black pepper
- 2 cloves garlic
Instructions
- Preheat oven to 425
- Soak cashews in boiling water, set aside.
- Slice your cauliflower into steaks. The thicker the better. Place on a pan lined with parchment paper. Spray with avocado oil spray on both sides.
- In a small bowl combine the parmesan, breadcrumbs, melted butter, salt, and garlic powder. Spread the mixture across the cauliflower steaks. Bake for 30 minutes until crispy. Rotate mid bake to prevent breadcrumbs from burning.
- Place all the sauce ingredients (minus the almond milk) in a high powder blender. Blend until smooth. Add almond milk as needed to get things moving. Adjust seasonings as desired.
- To serve, spread the sauce on a plate and top with cauliflower steaks. Garnish with herbs salt and pepper.
