If there is one thing we all can agree on, it’s that everyone loves tacos! Believe it or not, we had not done a taco concept on EDS in years. That being said, we’re producing a variety of quick and easy taco recipes! (stay tuned)
While you can easily throw a faux meat product on a taco and call it a day, it’s so seamless just to make your filling using veggies. One of the most versatile veggies that always works, is cauliflower! If you’re not crazy about cauliflower, this recipe will absolutely change your mind!
What’s different about this cauliflower taco recipe? The flavor!
I personally love cauliflower as it has a neutral flavor profile enabling you to really pack on whatever flavor you like. Also, you can actually marinate cauliflower to impart even more flavor! We pack on chipotle sauce in the marinade and peppers in the sauce, which truly enhance the flavor!
Bonus, cauliflower packs fiber making these tacos much more filling than faux meat options.

Vegan Chipotle Lime Cauliflower Tacos
- Total Time: 45 mins
- Yield: 6 tacos 1x
Ingredients
Chipotle Cauliflower:
- 1 head cauliflower, chopped into florets
- 2 tbsp chipotle sauce
- 2 tbsp lime juice
- 3 cloves garlic, minced
- 1/2 tsp salt
- Few cracks of black pepper
Chipotle Sauce:
- 1/3 cup cashews, soaked
- 2 tbsp lime juice
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/3 cup almond milk
Other:
- Tortillas
- Chopped cabbage
- Cilantro
- Avocado
Instructions
- Soak cashews in water boiling water for 10 minutes, drain, set aside
- Prep cabbage and other fixings
- Throw all the sauce ingredients in a high power blender. Blend until smooth.
- Place the florets in the bowl with the remaining ingredients. Toss and coat and let marinate.
- Preheat oven to 400 degrees. Line a backing sheet with parchment paper. Spread the florets out and bake for 25-35 minutes (toss and rotate cauliflower mid bake) until cooked through and crispy.
- Spread the sauce on the tortillas and fill with remaining ingredients. Top with a squeeze of lime.
