Chocolate Peanut Butter Fruit Leather

Let’s talk bananas!

As we speak you probably have banana that are not their way out lingering in your kitchen. Rather than whip up a banana bread, you can actually skip all that and make homemade fruit leather with just 2 ingredients and it takes minute to throw together.

No added sugar, no dehydrator needed, all you need is bananas, peanut butter powder or traditional and cocoa powder!

I’ll be honest, I’m not one to make homemade snacks unless it’s a dip as there are so many great store bought options. However, I’m a huge advocate for mitigating food waste and I love this concept. If dehydrating fruit sounds intricate, it’s not, and quite possibly the easiest thing to do! lol


What’s great about this recipe? Everything. It’s quick and easy to throw together, you can pop it in the oven and turn your back, it’s made with just 2 ingredients and no added sugar, it’s perfect for any season, can be made in bulk, you can mix up the ingredients, has rich notes of chocolate and peanut butter powder, you don’t need a fancy dehydrator, the store well, are a perfect snack, you can modify the texture by how thick you make it, and it’s just too fun!

Instructions

  1. Preheat oven to 175 degrees
  2. Place everything in the blender and blend until smooth
  3. Pour onto a pan lined with parchment paper. Smooth out the top so its about 1/4 inch thick. If it’s a little thicker it’s not a big deal, it may just take longer to cook. I recommend doubling the recipe so that you can make 16 roll ups.
  4. Bake for 2 1/2 hrs or longer until firm and not wet. You should be able to touch it without leaving an indention. Allow to cool and then slice into strips while still attached to the parchment paper. Store in a airtight container in the fridge.
  • Prep Time: 5 mins
  • Cook Time: 2 hrs

  1. ive got a batch of this recipe in my dehydrator almost done!! cant wait to try!! ran at 155* for 5 hours so far… wont be “raw” but couldn’t wait that long!! should be done in an hour I think. will come back to report to you!! 🙂

Living in New Zealand, I’ve never come across peanut butter powder – is this something that could be homemade (e.g. would it just be grinding up peanuts), or does it have processed/chemical elements that would make it difficult to replicate? If so, would this work with just increasing the amount of cocoa power so that it makes the volume of peanut butter powder (it would be a lot of cocoa powder to use so want to check on the balance of what each would do in the recipe before I give it a go!)

      Hi Joanne, I mentioned in the post that you can try using traditional peanut butter as I believe you’ll get the same result. I just chose to use the powder.
