This week has been one of those that calls for some chocolate! So cue these new vegan chocolate packed rice krispie treats! Believe it or not while I make countless recipes, there is something simply nostalgic about this classic treat! While you can make an everyday rice krispie treat, I love to mix it up and have fun with the flavors. So much that you can find an entire section dedicated to them on EDS lol. 

 

When thinking of the next flavor, I knew I wanted to do a chocolate treat, but with a fresh modern spin! Just like that, the new vegan Brown Butter Nutella Rice krispie Treats were born! I know what you’re thinking, that’s a lot going on in one bite! However, if you’ve ever tried anything brown butter, you know just how big of a difference it makes in creating flavor. Vegan nutella? It’s so easy! 

 

 

 

 

 


 

What’s great about this recipe? So much! These treats are quick, easy, affordable, pack a rich hazelnut flavor, are perfect for any season, contain no dairy in the chocolate or gelatin in the marshmallows, has rich notes of butter, features brown rice cereal, is a nutella lovers dream, you can dip in melted dark chocolate for an added boost of flavor, and the chocolate I used is sugar free!

Vegan Brown Butter Nutella Rice Krispie Treats

Ingredients

Nutella:

Rice Krispie Treats: 

  • 4 cups brown rice cereal 
  • 2 tbsp cocoa powder 
  • 1 package vegan mini marshmallows
  • 5 tbsp vegan butter

Instructions

  1.  Nutella: Preheat oven to 400 degrees. Place hazelnuts on a baking sheet and roast for 6-8 minutes until slightly browned. Remove from heat, allow to cool. Remove the shells with your hands by simply rubbing them together.
  2. In a microwave safe bowl melt the chocolate with coconut oil for 1 minute, stopping and stirring even 15 seconds until fully melted. 
  3. In a food processor add the toasted hazelnuts, cocoa powder, salt, vanilla and melted chocolate, and blend until smooth. 
  4. Rice Krispie Treats: Line a baking pan with parchment paper 
  5. Combine cereal and cocoa in a bowl, set aside.
  6. Measure out the vegan Nutella, set aside.
  7. In a large pot, over medium heat, melt the vegan butter. 
  8. Cook butter until foamy 2-3 minutes. Swirl the pan, or stir the butter, often to be sure the butter is cooking evenly. Keep cooking, stirring constantly until you start seeing little golden flecks in the butter. The color will progress from lemony-yellow to golden-tan.
  9. Once you see lots of little browned bits and smell that nutty aroma, immediately add the marshmallows and stir to combine until fully melted.
  10. Remove from heat. Quickly stir in the Nutella.
  11. Add the cereal and mix vigorously. If desired, fold in some whole extra mini marshmallows now.
  12. Transfer to the prepared baking sheet and press down. Keep treats covered. Allow to cool, slice and enjoy!
