If there is one thing we do during the week regardless of the season, it’s salad! It’s quick and easy and there are no rules as to what you can throw in. The struggle I see with clients is that they tend to get board. Same flavors, same dressing etc. By taking a few extra steps you can take an everyday salad and make a fab one!

 

One of my favorite approaches to salads is using cabbage as the base. Before you turn up your nose, hear me out! Cabbage will outlive any other green in the fridge, it packs more fiber than others, and of course is more filling. You may have to slice it up yourself, but I promise it’s worth it. 

 

My go to salads is a kale caesar and also this Cabbage Salad with Toasted Walnuts and Apples! I’ve been making this recipe since my first cooking days in 2014 and it still holds up today. In celebrating this staple salad, I knew I had to share it with readers. This salad is so impactful, that it doesn’t even need avocado, and you’ll crave it year round. If it’s not the components of the salad, it’s the dressing that just puts it over the top. 

 

Bonus, this salad is just so easy. So easy that the instructions are just a few bullet points lol. 

 

 

Don’t like apples in salads?  Me neither.

It’s quick, easy, fiber packed, filling, the dressing is so easy, is made sans cashews, you can switch up the cheese or omit altogether, it’s perfect for any season, it’s sweet, it’s savory, it has texture. the salad and dressing can easily be made in bulk, and is good by itself or pairs well with any protein.

Ingredients

Units Scale

Salad: 

  • 1/2 white cabbage, thinly sliced thinly sliced white cabbage
  • 2 cups fresh arugula
  • 1/2 cup fennel, thinly sliced
  • 3 scallions, sliced
  • 1/2 small apple, thinly sliced
  • 1/2 cup toasted pecans
  • 1/2 cup goat cheese or vegan cheese

 

Dressing:

  • 2 tbsp champagne vinegar
  • 2 tbsp olive oil
  • 2 tsp honey or agave
  • 1 tbsps chopped parsley
  • 1 tbsp chopped tarragon
  • salt + Pepper
  • 1 tbsp dijon mustard

Instructions

 

  1. Wash and prep all your ingredients.
  2. Throw all the salad ingredients together.
  3. In a small bowl combine all the dressing ingredients. Pour over the salad, and enjoy!
