Salted Caramel Puff Pastry Apples

If there is one thing I love to work with, its puff pastry dough! It’s cheap, easy to and bonus, vegan! There are so many things you can do with it the options are honestly endless. Needless to say, I was all about exploring a new holiday recipe that was seamless and so good!
When it comes to desserts, I love to focus on fruit as you can mitigate the added sugar in recipes. Apples are my go to for the fall/christmas and I knew we had to go with that fruit! Pastry dough concepts can require cooking of fruit or folding or cutting and various tedious approaches, but you can honestly just throw them in some dough with cinnamon and sugar and you have a winning dessert!
What’s great about this dessert? Every. Single. Thing. It features my new apple cider candied pecans, my homemade salted brown butter caramel, paris seamlessly with vanilla ice cream and just so good! All you need is a handful of ingredients, just a little bit of time, you can serve them upside down or rightsize up, you can use the pecans on countless other desserts, it has rich notes of apple cider, you can easily make them in bulk, they are perfect for entertaining, and just my newest obsession!

Salted Caramel Puff Pastry Apples
- Total Time: 45 mins
- Yield: 6 Apples 1x
Ingredients
- 1/2 cup cane sugar
- 2 tsps ground cinnamon
- 3 tbsps vegan butter
- 1 sheet pastry dough
- 3 apples
Apple Cider Pecans:
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 2 tbsps concentrated apple cider
- Pinch of salt
- Vegan vanilla ice cream
Instructions
- To make the pecans combine all the ingredients in a pan over medium heat. Cook for 3-5 minutes. Set aside to firm up and break into pieces.
- Preheat oven to 375 degrees. Line pan with parchment paper.
- Wash, peel and core apples.
- In a bowl combine cinnamon and sugar and place in circle on the lined pan.
- Brush apples with butter, then wrap in pastry dough sealing around the apple. Place cut side down over the cinnamon and sugar.
- Bake for 30 minutes or until golden brown. Baste the pastry dough in the now caramel and allow to set to caramelize.
- Top with vegan ice cream, candied apple cider pecans and my brown butter salted caramel!
