Let’s talk salads! 

 

When it comes to summer, I’m craving a salad nearly every day. It’s light, refreshing, doesn’t weigh me down, and they can be as veggie packed as you like. Needless to say, there are endless variations when it comes to salads. One of my personal favorites that’s good for any season, is a good Greek Salad!

My husband and I got Greek Salads just about every other day while I was plowing through both grad and undergrad lol. There is something about all the flavors that just blend seamlessly together. Since I love to pack on the protein and nutrients I like to add quinoa into the mix. While it strays from the traditional version, there is something about it that just elevates the flavor.

This salad delivers in so many ways that you don’t have to even feature a protein and can dare I say, even skip avocado as there is just so much going on already. It’s truly a win win all around and bonus, gorgeous!

 

 


 

So what makes this recipe great? Everything! It’s quick, easy, affordable, savory with the olives, slightly sweet with the dressing, the arugula elevates the flavor much more than traditional romaine, you can use vegan feta to keep vegan, it’s perfect for any season, filling, the quinoa adds protein, you could throw on toasted pine nuts, you can add avocado, you can throw on a protein if desired, the dressing is the perfect addition to this staple salad and countless other dishes!

Easy Greek Salad

Ingredients

Units Scale

Salad: 

  • 4 cups arugula
  • 1 cup cooked quinoa
  • 1/2 cup olives, sliced
  • 1 cup cherry tomatoes, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta or vegan feta
  • 1 cup english cucumber, sliced

 

Dressing: 

 


Instructions

  1. Wash and prep all your ingredients and throw in a  bowl. Cook quinoa according to instructions and allow to fully cool.
  2. Dressing: Whisk the ingredients together in a cup and pour over the salad, toss and coat
