Blender Oat + Tofu Waffles
I honestly can’t remember the last time I had a good homemade waffle lol. We did a few recipes year or so ago, but we were way overdue for a new concept. Long ago I was using a terrible waffle iron and I just always felt like they never got crispy and were just a soggy mess. That being said, I waited a while to delve into waffles as I just found them always underwhelming. I decided to revisit this classic dish again and just knew we had to do another one without white flour, but also put a fun modern spin on it..
and just like that the vegan Oat + Tofu Waffles were born!!
Not only are they flourless, eggless, crispy, pack protein and fiber, but they can be whipped up seamlessly in a blender. It doesn’t get much better than that! Why tofu? I honestly love adding a lil tofu here and there and while I was curious if it would modify the texture of the waffles, it absolutely didn’t!
If you’re struggling to get your kids to eat protein or simply have a lingering container of tofu lying around, or you’re looking for a waffle that will actually fill you up, you have to try these easy Blender Oat + Tofu waffles!
Bonus: These waffles remained crispy even overnight!
What’s fab about these waffles? Everything! These are quick, easy, contain minimal ingredients, are affordable, can easily be made in bulk, you can throw in a blender, you can add extracts or cinnamon to amp up the flavor, modify the toppings, they are flourless, eggless, effortless, pack fiber, pack protein, perf for any season, great for entertaining, and are much more filling than traditional waffles!! Think the tofu is detectable? It’s not!
