If there is one thing that’s widely loved, it’s Chipotle. I remember when they first launched and I immediately noticed the difference in their product versus what existed at the time. One of my personal favorite things was the cilantro lime rice. There are so many ways to elevate rice and I love this approach. It packs flavor, but isn’t overwhelming to the tastebuds. It’s crisp, fresh and goes with just about anything. 

There are a myriad of replica recipes, but I love the most seamless. That being said, it made sense to feature a ready made rice option that skips even the process of making rice. It doesn’t get much easier, and it doesn’t compromise anywhere.

What’s great about this rice? Everything! It’s quick, easy, affordable, packs flavor, is packed with cilantro, has notes of garlic and onion, you could even add some jalapeño if desired, it can easily be made in bulk, pairs well with just about any dish, perfect for any season, and just so good!

Ingredients

Scale
  • 2 packed of ready jasmine rice
  • 2 tbsps olive oil
  • 1 tsp lime zest
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 1 bunch cilantro, finely chopped
  • Juice from 1 lime
  • 1/2 tsp salt

 


Instructions

 

  1. Prep the ready made rice.
  2. Add the chopped cilantro toss and coat
  3. In a small bowl combine the lime zest, juice, salt, onion powder, garlic powder, and olive oil. Pour over the rice and serve warm.
