I’m not one to try the newest trends. I prefer to stand on the sidelines and see if something sticks around. That for me is telling to discern whether something is worth trying! The baked oat trend is still going strong, and absolutely worth your time! I had seen endless videos and felt that something so easy couldn’t be impactful with texture and flavor.
However, if you pack on the flavor like this recipe, it completely delivers!
oats are usually thrown in a bowl with milk and microwaved. This can make the oats soup or dried out, but most times it’s just underwhelming. By taking the oats and throwing them in a blender, you get a smoother texture. To get a little rise out of the oats and give it more of a cake like texture, baking powder is used. The combination of blending and baking powder really yields a fun result.

TikTok Vegan Salted Chocolate Espresso Baked Oats
- Total Time: 30 Mins
- Yield: Serves 2
Ingredients
- 1 cup whole or instant oats
- 1 banana
- 2 tbsp agave, maple syrup or honey
- 1 cup almond milk
- 2 tbsp cocoa powder
- 2 tsps espresso powder
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup stevia sweetened chocolate chips
- 1 tsp vanilla extract, optional
Instructions
- Preheat oven to 350 degrees.
- Grease 2 small ramekins and set aside
- To a high power blender add all the ingredients minus the chocolate chips and blend until smooth.
- Add the mixture to the ramekins and top with chocolate chips. Bake for 25 mins or until golden and the top pushes back. The deeper the ramekin the longer it will need to bake. Garnish with flake salt.
