Vegan Pink Glass Noodles with Garlic Sauce
Hello Pink Noodles!
I don’t know about you, but I love adding color to dishes. You can add color by simply adding vibrant produce to a recipe or one of personal favorites, dying noodles! Long ago nobody used natural dyes, but they’ve become more accessible and it’s so easy to just use produce. Pink is actually one color you can easily achieve with just a few pieces of raw beets!
Will the beets impart flavor on the noodles? No.
Will they offer a gorgeous hue? Yes.
I love to use glass noodles as they take minutes to make and the dying process is also quick and easy. One serving of noodles needs just a single cube of raw beet! The glass noodles are also great with a light sauce versus traditional pasta noodle which will hide the gorgeous color. Simply throw the sauce together and pour over the noodles. Pair with some tofu or a protein of choice, and you have a fab dish that festive and vibrant!

It’s quick, easy, affordable, you can pair it with veggies, pack on a protein, it’s perfect for any season, kid friendly, you can switch up the sauce, use traditional pasta, no messy dyes with chemicals, it can easily be made in bulk, and you can add more beets to amp of the color if desired!

Pink Glass Noodles with Garlic Sauce

Ingredients
Other:
- 1/2 medium size beet, chopped
- 2 servings glass noodles
- 1 scallion, chopped
- 1 tsp sesame seeds
Sauce:
- 1/3 cup reduced sodium soy sauce
- 3 cloves, garlic, minced
- 2 tablespoons brown sugar, packed
- 1/2 tsp red pepper flakes
- 1 tablespoon oyster sauce
- 1 tablespoon freshly grated ginger
- 1 teaspoon sesame oil
Instructions
- Bring 4 cups water to a boil. Add the chopped beets and cook for 3-4 minutes. Discard the beets.
- Now add the glass noodles and cook according to the packaging.
- Remove the noodles and coat in the sauce. Garnish with scallions and sesame seeds.
