If there is one veggie I had to pick as being the most versatile, it’s cauliflower!

 

You can honestly do so much with it, the options are endless. From soups to sauces, pizza crust and more, there isn’t anything that cauliflower can’t do. Bonus, it’s packed with fiber so it’s so filling. I have hundreds of recipes that I’m waiting to explore, one of them, was this roasted cauliflower with pepadew peppers! I had seen this combo in a recipe before, and knew I could put my own spin on it. 

 

Just like that, the Hot Honey Crispy Cauliflower with Peppadew Peppers was born!

 

This recipe is so easy and the flavors are so on point, it’s a solid 10 on the scale for me. Over the years of doing nutrition I’ve come to realize it’s honestly the easy concepts like this dish that we crave. If you can take an everyday veggie and turn it into something you crave, that’s a true win!  

 

In terms of flavors I love all things peppadew!

 

Not familiar with these peppers? 

 

Pickled and jarred Juanita (or piquanté) peppers are  from South Africa—commonly called Peppadew peppers—are small and round like a cherry tomato, but sweet and peppery like a pepper. Peppadew is the brand name of the South African company that makes them. Look for them with other pickled vegetables at well-stocked grocery stores.

 

Simply put, they are sweet, tart, and have a hint of heat! They can pair well with a myriad of dishes too!

 

 

 

 

 


 

What’s fab about this dish? Everything! It’s quick, easy, flavor packed, fiber packed, perfect for any season, it’s sweet and savory, has a hint of heat, can be made vegan, you could throw them on a salad, it can easily be made in bulk, and is the perfect accompaniment to any main dish!

Crispy Hot Honey Cauliflower with Peppadew Peppers

Ingredients

Units Scale
  • 1 large head cauliflower, chopped into florets
  • 2 tbsps olive oil
  • 1/2 cup chopped peppadew peppers
  • 1/4 cup toasted pine nuts
  • 1 tbsp hot honey or agave, see directions
  • 1/2 cup goat cheese or vegan feta
  • Salt + peppers as needed
  • chopped parsley

 


Instructions

  1. Preheat oven to 375
  2. Line a baking sheet with parchment paper. Place cauliflower florets on the pan. Coat with olive oil, salt, and pepper.
  3. Bake for 10-15 mins, rotating mid bake. Set oven to broil and cook for 5 mins. This gives the cauliflower a lil crispiness
  4. Remove from heat, top with goat cheese or vegan feta cheese, peppadew peppers, toasted pine nuts, hot honey or agave. (to DIY just combine agave with 1/2 tsp red pepper flakes)
  5. Garnish with chopped parsley and season with additional salt and pepper.
