If there is one concept that I can never get enough of for countless reasons.. It’s marshmallow treats!

 

While I typically stick to a plant strong diet, I like to have fun with vegan desserts and create seasonal concepts to share with you! Bottom line, we have to have flexibility in the diet. The key is, portions. 

 

The love I have for marshmallow treats perhaps stems from not having them a lot as a child and finding them nostalgic all together. For those reasons coupled with the fact that they are just so effortless and a blank canvas to play around with making the options endless, I’m simply obsessed!

 

When it comes to summer, I’m all about blueberries! Whether fresh or dried, I put them in everything, but especially desserts! Being a fanatic of al things white chocolate this combo was sheer perfection1

Instructions

  1. In a large pant melt coconut oil. Add marshmallows, cook until fully melted. . Once combined, turn off heat and add the cereal and dried blueberries and continue to combine. If the mixture seems too stick  still, add more cereal.
  2. Press into a dish and allow to slightly firm for 5 minutes in the fridge. Melt coconut oil and chips in the microwave for 30 seconds while continue to stir every 10-15 seconds until fully melted. Drizzle over the top. While still wet top with the dried blueberries.  Allow to cool, slice and enjoy!
