Let’s talk salads! 

 

When it comes to summer, I’m craving a salad nearly every day. It’s light, refreshing, doesn’t weigh me down, and they can be as veggie packed as you like. Needless to say, there are endless variations when it comes to salads. One of my personal summer favorites, is a staple Strawberry Spinach Salad! 

Strawberries are in season so they pack a ton more flavor, and they make the perfect addition to a spinach salad. Throw in some savory toasted pecans, with goat cheese or vegan feta for a hint of tartness and a sweet poppyseed dressing to tie it all in together.. and you have a fab salad! This salad delivers in so many ways that you don’t have to even feature a protein and can dare I say, even skip avocado as you have healthy fats from the pecans. It’s truly a win win all around and bonus, gorgeous! 

 

 


 

So what makes this recipe great? Everything! It’s quick, easy, affordable (if made in the summer), savory, sweet, you can use vegan feta to keep vegan, you can mix up the nuts, you can add avocado, you can throw on a protein if desired, the dressing is the perfect addition to this staple salad, and it’s mayo free!

Strawberry Spinach Salad with Poppyseed Dressing

Ingredients

Units Scale

Salad: 

  • 4 cup spinach
  • 1/2 small red onion, thinly sliced
  • 1 cup sliced strawberries
  • 1/2 cup toasted chopped pecans
  • 1/2 cup goat cheese or vegan feta cheese

Dressing: 

  • 1/3 cup olive oil
  • 2 tbsps balsamic vinegar
  • 1 tbsp apple cider vinegar
  • 2 tbsp minced shallots
  • 2 tbsp honey or agave
  • 2 tbsp dairy free sour cream or yogurt
  • 1 tbsp poppy-seeds
  • 1 tbsp dijon mustard
  • Salt/Pepper as needed

Instructions

  1. Wash and prep all your ingredients. Throw it in a bowl.
  2. In a small bowl combine all the dressing ingredients, adjusting the ingredients as you like.
