Vegan Hot Chocolate Cookies

 

 

 

 

 

Let’s talk holiday cookies! 

 

I’m always one for holiday concepts, but many don’t gravitate towards peppermint and chocolate, pumpkin, etc. however, something everyone gravitates towards.. chocolate! The older I get the more I carve a good hot chocolate. Growing up we always enjoyed the packaged hot chocolate. However, you can make an amazing hot chocolate with just a handful of ingredients.

What’s also great? You can replicate that same classic flavor in a cookie, marshmallows included! 

I’ve always thought of doing a hot chocolate cookie. However, there were minimal concepts online and I figured it wasn’t a winning concept. Many also didn’t even incorporate the marshmallows, but just plopped them on top which I found odd. Throwing the marshmallows inside completely elevated the cookies to be everything you imagine and more. 

 


 

What’s great about this cookie? Everything! It’s quick, easy, dairy free, requires no sifting of ingredients, no chill time, packs a rich hot chocolate flavor, you can add spices, you can garnish with flake salt,  can be made with just cocoa powder if you can’t find vegan cocoa powder, features stevia sweetened chocolate chips, they are packed with marshmallows, requires just a flax egg, is perfect for the winter, and pairs great with a hot chocolate!

Instructions

  • Place marshmallows in the freezer.
  • Combine the ground flax and water and set aside to thicken. (10 mins)
  • Preheat the oven to 375F. Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa mix, salt, baking powder, and baking soda. Be sure not to pack your flour
  • In a large bowl or the bowl of a standing mixer, beat the vegan butter and sugars together on medium speed until light and fluffy, about 3 minutes. Add the flax egg and vanilla and beat until well combined, stopping to scrape down the bowl. Add the flour mixture and mix on low speed just until combined. Mix in the chocolate chips. If the dough seems dry, add 1 tsp of almond milk and combine. 
  • Scoop the dough into balls and place 2-3 chilled mini marshmallows on the inside. Form the dough around it and place on the baking sheets 2 inches apart.
  • Bake 1 sheet at a time for 10-12 minutes. Cool for a few minutes on the baking sheet and then transfer to a wire rack to cool completely.

Notes

*If you skip the vanilla, add 2 tsp almond milk
