Made these this morning. Right before I was mixing the wet & dry ingredients together, I realized it only had 3 T of maple syrup for sweetness, so I added 1/4 C of sugar in. I am a sweetaholic and wanted these muffins with a tad of sweetness. The muffins turned out well. The are soft and fluffy. It definitely tastes like gingerbread. Perfect for the Fall weather.
