Let’s talk pasta!

 

 

If there is one type of recipe I love to explore on a weekly basis, it’s pasta! Typically you envision that pasta is paired with either a red or white sauce and you call it a day. However, there is so much room for diversity when it comes to pasta! Whether it’s the type of pasta, the sauce or the veggies, the options are endless and you’ll never find yourself getting bored. That, is a win my friends!

When it comes to types of pastas, I gravitate towards angel hair, rigatoni, penne and linguini. There is something about linguini that just pairs well with any pasta concept. It’s not spaghetti, but it’s not a penne, and it’s not fragile like angel hair, its just perfection!

When thinking of the next best pasta concept, I knew we had to do a Miso pasta! I’ve been meaning to explore this recipe for the past year, but kept letting it pass me by. If you’re not familiar with miso, it really works in countless recipes. From sweet to savory, it just organically enhances the flavor profiles you’re working with. While I had seen a few miso pastas here and there, I knew we could further amplify the flavor by using brown butter… and I was absolutely right! 

Brown butter is one of those things that blew up years ago. However, it’s become a mainstay with cooking as it just works. Whether it’s sweets or savory concepts, it’s a win every time. That being said, I knew if we combined both brown butter and miso, we could achieve a memorable dish, again, ..I was right!

 

 

 


 

What’s great about this dish? Too many things! It’s quick, easy, affordable, features just 3 ingredients, you can add a protein if desired, it packs a rich flavor with notes of miso and brown butter, it’s perfect for any season, you could turn it into a sauce and use it on proteins, you could add a hint of sweet and heat to really bring the flavors full circle, and it’s just hands down, perhaps my number 1 favorite pasta dish! (bold statement)

Brown Butter Miso Pasta

Ingredients

Units Scale
  • 16 oz linguini
  • 5 Tbsps vegan butter or traditional
  • 3 Tbsps red miso
  • 1 1/2 cups pasta water
  • 1 cup vegan parm or traditional parm
  • Garnish: Sliced seaweed

Instructions

  1. Bring a large pot of salted water to a boil. Add your pasta and cook just until al dente. It will continue to cook. Reserve 1 1/2 cups pasta water, then drain.
  2. In a pan over medium heat add the butter and and continue to whisk as it sizzles and begins to brown and flecks appear. Don’t overcook. (2-3 minutes)
  3. Now add the miso, pasta water and bring to a boil and combine.
  4. Once combined and bubbling, add the cooked pasta and parmesan. As it cooks continue to stir vigorously so you get a smooth result. If you don’t it will be a little clumpy, but still good!
  5. Garnish with thinly sliced seaweed.
