If there is one cuisine I love, it’s Mexican style foods or anything with a little bit of heat!
I find that when you add one element of heat it enhances all of the flavors, almost like salt does. However, years ago, I ran from the sight of heat in any dish. This is proof that as you age your tastebuds evolve. In actuality they become less and less to by the time you’re in your 70’s and 80’s it makes it hard to discern whether food is spoiled and you have to add an abundance of salt to everything to even taste the flavors. This is why that age group typically has a higher salt intake. True story!
One of my favorite holidays simply based on the food, is Cinco de Mayo! For whatever reason, perhaps my background, I’ve always gravitated towards this cuisine. I find that they have endless plant based options, are filling, packed with flavor, and always pack heat!
